Cranberry Streusel Coffee Cake
Yield: 10 to 12 servings Cranberries go with more than just turkey. This moist and colourful cake is perfect for a Christmas brunch.
Streusel 3/4 cup brown sugar 1/2 cup flour 1 tsp. cinnamon 1/4 cup butter or margarine
Cake 1/2 cup butter or margarine 1 cup brown sugar 2 eggs 1 tsp. vanilla 2 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 cup sour cream 2 cups cranberries, fresh or frozen STREUSEL 1. Combine sugar, flour and cinnamon. Mix well. Cut in butter until crumbly. Set aside. CAKE 1. Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla. 2. Sift together dry ingredients. Add to creamed mixture alternately with sour cream. 3. In a greased and floured fluted tube pan, layer half the streusel, half the cranberries and half the batter. Repeat layers, beginning with cranberries, followed by streusel and batter. 4. Bake in a 350F oven for 1 hour. Cool for 10 minutes before turning cake out of pan.
