Here's a favourite recipe of mine from my cookbook, Breakfast at the Manor.

Double-Chocolate Banana Muffins
1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1 1/3 mashed ripe bananas (2 or 3 medium)
1/3 cup vegetable oil
1 egg
1 cup (6 oz.) regular or mini semi-sweet chocolate chips
In a large bowl, combine the first 6 ingredients. In a small bowl, combine bananas, oil and egg. Stir into dry ingredients, just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake at 350 for 20 to 25 minutes, or until muffins test done.
Yields: about 1 dozen.


Pudding de Chômeur

Sift or blend together:
1 1/2 c. all-purpose flour
1/2 tsp. salt
2 tsp.  baking powder
Cream: 1/3 cup shortening

Gradually blend in:
1 cup  white sugar
2  eggs
1 tsp.  vanilla
Beat until light and fluffy.
Add sifted dry ingredients to creamed mixture alternately with:
3/4 cup milk
Combine lightly after each addition.

AUCE:
Bring to a boil:
3/4 cup maple syrup
3/4 cup water

Pour into an 8" square pan. Spoon cake batter on top.
Bake in 350
EF. oven for 50 to 55 minutes, or until cake springs back when lightly touched. Serve hot, spooning sauce over top.
Serve warm with a sauce. May add coconut and/or chopped nuts to sauce before spooning batter over.
