Maple-Glazed Spareribs a favourite from Wilma's Kitchen
Frequent bastings with maple syrup and soy sauce make these stuffed ribs particularly tender, juicy and good.
2 cups stale, soft bread crumbs 1/4 cup melted butter or margarine 1/2 cup chopped celery 1/4 cup chopped walnuts 1/2 cup raisins (optional) 1/4 cup chopped onion 1/2 tsp. salt 1/2 tsp. sage, thyme or poultry seasoning 4 lbs. back spareribs 1 cup maple syrup 1 tsp. soy sauce
Combine first seven (eight, if raisins are used) ingredients. Cut rubs into eight strips. Pile dressing mixture at one end of the ribs. Roll up and tie with string. Place in a shallow baking pan and sprinkle with salt and pepper. Bake at 450EF. for 20 minutes. Reduce heat to 325EF.. Brush spareribs with a mixture of maple syrup and soy sauce. Bake one hour longer or until tender, basting frequently. Note: If you're in a hurry, leave the slabs of spareribs whole and put 1/2 in bottom of pan, spoon stuffing over and cover with remaining ribs.
